  1. 1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. 2. Add chopped onion, carrots, and celery. Cook, stirring occasionally, for 5-7 minutes, or until softened.
  3. 3. Stir in minced garlic, dried oregano, dried thyme, and ground cumin (if using). Cook for 1 minute more until fragrant.
  4. 4. Add the rinsed lentils, vegetable broth, and diced tomatoes (with their juice) to the pot.
  5. 5. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes, or until the lentils are tender. Stir occasionally.
  6. 6. If using spinach or kale, stir it into the soup during the last 5-10 minutes of cooking, until wilted.
  7. 7. Season generously with salt and freshly ground black pepper to taste.
