Spicy Corn Chowder
This Spicy Corn Chowder is a creamy and zesty vegetarian soup with fresh corn, potatoes, and a hint of jalapeño.
Ingredients
- 2 cups corn kernels
- 2 potatoes, diced
- 1 jalapeño, minced
- 4 cups vegetable broth
- 1/2 cup cream
- 2 tbsp olive oil
Instructions
- 1. Sauté jalapeño and potatoes in olive oil.
- 2. Add corn and broth, simmer 15 mins.
- 3. Stir in cream, blend half for thickness.
- 4. Serve.
