Sweet Potato Falafel
These Sweet Potato Falafel are a flavorful vegan twist, baked until crispy and served with a tahini-yogurt sauce.
Ingredients
- 1 sweet potato, mashed
- 1 can chickpeas (15 oz)
- 1/4 cup parsley, chopped
- 1 tsp cumin
- 2 tbsp flour
- 1/4 cup tahini
- 2 tbsp olive oil
Instructions
- 1. Preheat oven to 375°F (190°C).
- 2. Blend sweet potato, chickpeas, parsley, cumin, and flour.
- 3. Form into patties, brush with oil, bake 20-25 mins.
- 4. Serve with tahini.
